Boiled Potatoes (Korean Style, 삶은 감자)
In Germany, potatoes seem to be loved by everyone. Since moving to Germany, my family has been enjoying many potato dishes. Especially pommes (French fries) feel quite special here, and even the mayo sauce for fries is unique.
In Korea, potato dishes are typically eaten as a side dish, like stir-fried potatoes, or as a snack, like boiled potatoes. Today, I’ll introduce you to Korean-style boiled potatoes.
Usually, we use a standard pot to boil the potatoes. The size of the potatoes can vary widely, but if they’re about the size of a fist, that’s ideal. If you’re using larger baking potatoes, you can cut them in half before boiling.
Steps
Add 400ml of water to a pot. Stir in the sugar and salt to dissolve slightly—it doesn’t need to be fully dissolved.
Place the potatoes in a single layer in the pot. Aim for 8–10 potatoes depending on size.

Bring the water to a boil, then cover the pot and reduce the heat to medium-high. Boil for about 20 minutes, turning the potatoes occasionally.
After 20 minutes, test the potatoes by inserting a chopstick or fork. If it slides in easily, the potatoes are done.
At this point, uncover the pot and let the remaining moisture evaporate while cooking. When only a little water remains, reduce the heat to low, cover the pot, and shake it gently.
For a fluffier texture, leave the potatoes on low heat for a bit longer until they develop a lightly roasted appearance.
