However, if you’re looking for an authentic Korean kimchi flavor, I highly recommend Jongga Kimchi sold at Asian markets. It’s available in various sizes, and it’s one of the most trusted brands in Korea. As a kimchi enthusiast, I personally love this brand’s kimchi.

Doenjang (koreanische Sojabohnenpaste): It's great to add it if you have it, but it's okay if you don't.

Instructions

  1. Chop the kimchi into small pieces and place it in a bowl.

  2. Add chili powder, sugar, soy sauce, sesame oil, mayonnaise, doenjang, and green onion to the bowl. Mix everything well.

  3. Heat a frying pan and add about 2 tablespoons of olive oil.

  4. Spread the mixed kimchi fried rice ingredients evenly in the pan.

  5. Once you hear a sizzling sound, add the cooked rice and mix it thoroughly with the other ingredients. Reduce the heat to medium to avoid burning. Mixing may take some time.

  6. After everything is well combined, spread the rice evenly across the pan and let it sit on high heat for about 1 minute to achieve a slight crisp.

  7. If you enjoy fried eggs, place one on top for added flavor. Adding seaweed flakes also enhances the taste.
