Kimchi Udon (Korean Spicy Kimchi Udon Soup, 김치우동)
Korean cuisine incorporates kimchi in countless dishes. Today, I’d like to introduce you to a comforting bowl of kimchi udon—perfect for those chilly, rainy days when you want something warm to soothe your soul. Udon is originally a Japanese dish, but because of the proximity between Japan and Korea, many dishes have been adapted into fusion versions that suit each country’s unique palate.
The combination of kimchi and udon creates a slightly spicy yet refreshing taste—it’s not as spicy as Korean Shin Ramyun but delivers a heartwarming flavor that’s just right.
Instructions
Boil the water:
Pour 500ml of water into a pot and bring it to a boil.
Add ingredients:
Once the water is boiling, add the chicken stock, tsuyu, minced garlic, and chopped kimchi. If you have fish cake, add it as well—it enhances the flavor.
Cook the udon noodles:
When the broth starts boiling, add the udon noodles. Most udon packages recommend boiling for about 3 minutes. Here's a tip: Do not forcefully pull apart stuck noodles. Once added to boiling water, let the noodles sit for about 1 minute, then gently separate them using chopsticks or a fork.
Add finishing touches:
If you have mitsuba, add it now for an authentic touch. If not, you can slice some green onion and add it for a similar effect.
Serve:
After 3 minutes, your delicious kimchi udon is ready to enjoy! It’s warm, comforting, and will leave you feeling satisfied. Enjoy your meal! 😊
